Made from wheat flour wrappers filled with a mixture of chopped wild scallions and finely minced fatty pork seasoned with coarse salt. Cheng Youyou rolled uneven wrappers while Ji Xuan made perfect ones. They were being prepared for cooking once the water boiled.
