Highly refined white salt that costs two taels of silver for a small jar in ordinary times, and over ten taels in the capital among nobles. Mei Qian produced it by boiling coarse salt water and evaporating it until white crystals formed. The taste was slightly bitter and darker than Li Bai Zhou's previous batch.
